Simple and Wholesome Slow Cooker Chicken Casserole for the win!

One pot wonders are something we could all do with in our recipe stockpile. This incredibly simple chicken casserole is a dish that the whole family can eat. Perfect comfort food that is full of goodness that requires little effort by you.

Ingredients – to serve 2

  • 1 tablespoon of olive oil
  • 1 large onion – finely chopped
  • 2 celery stalks – chopped
  • 2 carrots – chopped in chunks
  • 1 parsnip- chopped in chunks
  • 2 medium/large potatoes, (roosters work well), chopped
  • 2 chicken fillets – diced
  • 500ml chicken/vegetable stock
  • 1 tablespoon tomato purรฉe
  • Seasoning

What to do!

  • Fry your onions and celery off in a pan. Once lightly browned and soft add to the slow cooker.
  • Fry your chicken until sealed and brown
  • Add chopped vegetables, potatoes and diced chicken to the slow cooker.
  • Top with purรฉe and stock and ensure all the elements are covered with the liquid. Add more stock/water if necessary)
  • Turn on slow cooker and leave on high for 4-5 hours or on low for approx 8 hours)

A note on seasoning – I left this unseasoned to allow my baby to eat it too. If this isn’t for young children, season as you go (ie season the onions and celery as they fry, season the chicken with salt and pepper before frying and a little more seasoning for the vegetables). Careful all the same – stocks vary in saltiness so remember you can always add more after.

A note if you don’t have a slow cooker – this can be cooked in the oven at 180c in a casserole dish for about 45 minutes.

Garnish for fanciness if you so desire with parsley. Devour in one go.

Just a side note – Because there are so few elements in this recipe, the tastiness (and wholesomeness) of the dish is dependent on the raw ingredients you use. Where possible use the best free-range or organic chicken fillets and a homemade organic chicken stock makes all the difference to the flavour. If you don’t have this use the best quality stock cubes you can get your hands on. It will be totally worth it.
