I tend to ignore the recipes that feature on the back of shop-bought packets and jars assuming they are next-level basic and that I will find something much more sophisticated from my cookbooks or online. However, having made this amazing tomato soup on a whim last week, taken from the back of a Bunalun jar, I won’t be so quick to discount such recipes again. It was so rich and flavoursome I have made it 3 times since.
All you need to make this soup which serves 4 are;
- 25g butter
- 2 medium onions (finely chopped)
- 2 sticks of celery (finely chopped)
- 2 cloves of garlic (finely chopped)
- a jar of passata (680g) – (I used the Irish brand, Bunalun organic crushed tomato passata)
- 500ml chicken/veg stock
- pinch of sugar, salt and pepper

- Melt butter in a heavy based saucepan over a low-med heat
- Once melted, add chopped onions and celery and sweat with the lid on for 10minutes, until soft
- Add chopped garlic and sweat for another 5 minutes
- Add the jar of passata, a pinch of sugar and a few twists of salt and pepper
- Add the boiling stock
- Bring to a simmer for another 15minutes
- Blend, check for seasoning
