Luncheon with @annsfavourites a couple of weeks ago in @pichetdublin - ... delicious! #willbeback 2 years to the date since I started with Ballymaloe cookery school and on the epic journey! Lots of amazing projects in between working with amazing people like @fabfoodtrails @peptalkhq @brother_hubbard_north @feastcateringirl @lindareid1408 @oconnellsrestaurant ! Loving every minute! Obviously the food has been πŸ‘Œbut the people I've met along the way even better! Big hello to all the alumni of Sept 2015! 😘 Happy Monday! πŸ™Œ Desserts in @inchydoney_lodge_and_spa - like seriously good! πŸ‘Œ#countthememoriesnotthecalories Beachside luncheon πŸ‘Œ If anyone is looking for decent Greek cuisine in Dublin, Mykonos Taverna on Dame Street was a tasty restaurant we stumbled upon last night. Fresh tzatziki, pitas, grilled halloumi salad, garlic prawns, squid etc- πŸ˜‹ Homemade egg-fried rice with lots of veggies, a little chorizo & some chopped salted peanuts. Love a good #fakeaway πŸ²πŸ‘Œ. Secret to perfect fried rice is πŸ‘‡
πŸ’‘use cold refrigerated rice that was cooked earlier
πŸ’‘scramble your eggs separately first
. ❓How to (for approx 2 ppl) ❓
-fry off 2 cloves minced garlic in peanut oil
- after a minute, add your finely diced veg and toss on a high heat
- after about 3 mins toss in the cooked cold rice and heat through
- add couple tablespoons of fish sauce and couple tblsp of soy sauce. (To your taste - remember you can always add more)
- add the pre-scrambled egg ( I used two eggs ) and toss for another minute - ready to add to hot plates with some salted peanuts and diced scallion and coriander if you have it. Yum! If this isn't clear , shout with questions! .
πŸ‘‰ps if any left over this is great for the lunchbox the next day and tasty cold too. Sharp knives and deep breathing skills required for filming today with @peptalkhq ! Great craic! πŸ‘©β€πŸ³πŸ½πŸ₯• Five mile goats cheese salad with roasted butternut squash in @avocaireland πŸ‘Œ
